Best of Avocados on Toast

Lots of exciting things have been happening in the world of Alice. About a week ago, I was contacted by a young entrepreneur who saw one of my posts on Instagram. He took a look at this blog, and decided to contact me about having me a regular contributor on his website! His business is the Power 20 app, which focuses on fitness and advocates a plant-based diet.

I’ve only had this blog for two months, and have been wondering whether or not it was really worth it to put so much effort into keeping an Instagram account and using so many vegan hashtags. I am so lucky to have had a great opportunity find its way to me! That being said, I will still be keeping this blog updated as a personal endeavor. For new bloggers out there, keep up the good work! You may only be catching one or two loyal readers for now, but every little piece of advice you share makes a small difference that can lead to a big change in eating habits later on.

One of the recipes I featured was a very simple avocado toast. I’ve had avocado on toast in several different ways, but this recipe is by far my favorite.

Avocado Chickpea Toast from Avocado AliceRecipe: Avocado Chickpea Toast

Ingredients:

  • One slice of whole-wheat bread, toasted
  • 1/4 of an avocado, mashed
  • 1/4 of a cup of canned chickpeas (garbanzo beans)
  • 1 tsp of lime juice
  • 1-2 sprigs of cilantro, chopped
  • 1-2 tsp of chili powder
  • Salt and pepper, to taste

Directions:

Spread mashed avocado onto toast. Top with chickpeas and smash gently with the back of a spoon. Alternatively, you can mash the chickpeas and avocado together in a bowl before spreading onto toast. Top with cilantro, lime, chili powder, and salt and pepper.

Obviously, you could use store-bought bread for the toast, but I was in the mood for baking this weekend and made a few loaves of bread. Homemade is so much better than store-bought!

The bread recipe I used is from Vegan Baking. It takes some patience waiting for the dough to rise and proof, but it is well-worth it in the end! I also recommend this recipe from Minimalist Baker.
